Chicken Satay Noodles recipe by Aisha at DesiRecipes.com.
A filling Thai dish in which Strips of chicken (or beef) are marinated in a special Thai paste and serve over noodles along with Satay sauce.


Ingredients
2 tsp ground coriander
2 tsp ground cumin
2 tsp ground turmericClick to find more about turmeric
700 grams chickenClick to find more about chicken fillets, chopped
250 gr noodles 6 green onions 150 gr
Fresh baby corns
2 tblsp peanut oil
1 large carrotClick to find more about carrot, sliced thinly
2 tblsp finely chopped coriander leavesClick to find more about coriander leaves
SATAY SAUCE
1/2 cup peanut butter
1/2 cup coconut cream
1/2 cup chickenClick to find more about chicken stock
2 tblsp soy sauce
1 tblsp brown sugarClick to find more about brown sugar
1 tblsp limeClick to find more about lime juice


Preparation
Combine coriander, cumin and turmericClick to find more about turmeric in a bowl, add chickenClick to find more about chicken, mix well to coat with spices.
Place noodles in a large bowl, cover with boiling water.
Chop onions and cornClick to find more about corn diagonally into 4 cm pieces.
Heat half of the oil in a large frying pan; stir fry chickenClick to find more about chicken, in batches, until browned.
Heat remaining oil in pan; stirfry cornClick to find more about corn and carrotClick to find more about carrot until just tender. Return chickenClick to find more about chicken to pan with noodles, onions, and satay sauce, stirfry until heated through.
Sprinkle with fresh coriander.
SATAY SAUCE: Combine ingredients in a bowl and mix it.

I though this was a good base recipe. however the sauce did need some help for my taste. I added a clove of garlic, and a tbsp. of lime zest and then mixed it with a hand blender to make sure it was nice and smooth. I also added bell pepper, bean sprouts, toasted cashews. It turned out fabulous!

yes, by fillet i think they mean chicken chunks.

I wasn't sure what chicken filets, chopped meant. Do you mean to cut the chicken into very fine pieces? This would almost be like ground chicken. Or would it be chicken breast sliced thin (usually this is what stir fry calls for)? I used some canned chicken I had on the shelf, mixed it with the dry spices and let it stand a while, then added the other ingredients. It was very good.
